Maple Baked Beans
Eastern Woodlands,US

1 lb. dried beans

6 strips salt pork or bacon
1 cup maple syrup
1 tsp dry mustard
salt, optional

Cook beans. 


Place salt pork on bottom and sides of a 1 1/2 quart baking dish.

Combine beans, syrup, mustard, and salt, if using. Pour into baking dish.

Bake 300 degrees fahrenheit for 2 hrs. Uncover and bake 30 min. longer. 

Serves six.

In the Eastern Woodlands as elsewhere, pork fat replaced bear after its introduction by the Spanish.

Introduction

  On this site I will explore American foods, sharing some little history and philosophy, but mostly recipes. I call it Turtle Island after one name for the North American continent because that's where some of my people are from, and will include all of the Americas. I am also interested in historical interaction and adaptation by the mixing of cultures with these foods.
  I'll start by listing some ingredients: corn, beans, and squash, known as the three sisters, maple sugar, tomatoes, avocados, potatoes, chocolate, and more.
